Housed within the historic Traveller’s Building in Pioneer Square Seattle, Bisato pays homage to the history of the Japanese boarding house. The open floor plan balances intimate interactions with James Beard Award-winning chef, Scott Carlsberg and privacy for each party. Level shifts and subtle architectural elements differentiate the space into four open rooms: bar, kitchen and two dining areas. Consistent throughout the entire restaurant, an ongoing dialogue between guests and the kitchen is encouraged through the open layout. Original Douglas Fir beams and columns provide a warm backdrop to modern and Japanese-inspired elements.
